San Marzano DOP
Grown on volcanic soil near Vesuvius. Sweet, low-acid, and irreplaceable.
Healdsburg · Twenty Seats · Wood-Fired
An intimate osteria where Neapolitan tradition meets California soil. Every pie is a conversation between wood fire and patience.
The Story
Chef Matteo Ricci left Naples with a single conviction: that greatness lives in restraint. After years in the wood-fired rooms of Campania, he found his second home among the vines of Sonoma County — a place where soil speaks as clearly as flour.
Vespera is not a restaurant of abundance. It is a room of twenty seats, one oven, and a kitchen that refuses compromise. We mill our dough over seventy-two hours. We source San Marzano DOP from the slopes of Vesuvius. We finish every pie by hand, under flame that never sleeps.
This is hospitality as reverence — for ingredient, for guest, for the quiet ritual of gathering around fire.
— Chef Matteo Ricci, Founder
The Craft
We believe a pizza is only as honest as what goes into it. Every element on our board is chosen with uncompromising care.
01
Grown on volcanic soil near Vesuvius. Sweet, low-acid, and irreplaceable.
02
Hand-pulled daily. Silken, milky, melting into the cornicione at 900°F.
03
Aged 24 months. Draped post-fire so it warms, never cooks.
04
Single-estate from Umbria. Peppery finish that lifts every bite.
05
The gold standard. Fermented slowly for structure, blister, and soul.
The Experience
Candlelight on linen. The low roar of the oven. Wine poured with intention. Vespera is designed to feel less like dining out — and more like being welcomed home.
The Dining Room
Watch every pie leave the fire. There is no secret — only craft, made visible.
Italian natural wines and Sonoma bottlings chosen to honor dough, tomato, and smoke.
We do not rush the table. Your evening is yours — uninterrupted, unhurried.

Guest Voices
“The most considered pizza I have ever eaten. Not loud — just perfect. We drove two hours and would do it again tomorrow.
“Twenty seats and not one wasted. The room feels like a secret. The Midnight Truffle is worth the reservation alone.
“Chef Ricci cooks with the confidence of someone who has nothing left to prove. Quiet luxury on a plate of flour and fire.
“Anniversary dinner. Candlelight. The Ember & Honey. They made us feel like the only two people in Healdsburg.
